Traditional homemade pasta

Introduction to Italian pasta and raw materials. We will demonstrate dough preparation (soft wheat flour and eggs) and shape various types of Italian pasta using a rolling pin, knife, and pasta cutter. Participants will individually prepare dough and make pasta varieties like tagliatelle, pappardelle, tagliolini, garganelli, as well as filled pasta like cappelletti, tortelli, ravioli, and Strozzapreti (organic soft wheat flour and water). Pasta fillings will include renowned Italian flavors like Parmigiano Reggiano PDO, Squacquerone di Romagna PDO, etc.
At the end lunch tasting: our chef will prepare for you two Artusi recipes, or 1 Artusi and 1 seasonal Italian sauce recipe (to season es. Tagliatelle all’uso di Romagna n.71 and Tortelli n.55) with handmade pasta made by you and taste it together with local typical Romagna Sangiovese DOC wine or Romagna Albana DOCG wine, waters. The original “Tagliatelle all’uso di Romagna no.71” will be served on Stanley Tucci footstep inspired to the Searching for Italy’s episode in Emilia-Romagna when he’s prepared pasta with ragù alla Bolognese following Artusi’s recipe no.87
